Cabinets and trim go all the way to the ceiling but the cabinets will probably need to be stacked.

As carolyn suggested you can drop the ceiling to 9 feet in the kitchen or you can simply add a one foot soffit around the perimeter of the kitchen to make the ceiling 9 feet for the cabinets.
